(No onion, garlic or ginger)
Ingredients
- Oil – 2 tbsp
- Cumin seeds – ½ tsp
- Turmeric powder – ¼ tsp
- Cabbage (shredded) – 3 cups
- Potato (peeled and cut into quarters lengthwise, then finely sliced) – 1 cup or (diced into cubes)
- Salt – to taste
- Coriander powder (dhaniya powder) – ¾ tsp
- Red chilli powder – ½ tsp
- Amchoor (dry mango powder) – ¼ tsp
- Garam masala – ¼ tsp
Method
- Heat oil in a pan. Add cumin seeds and let them sizzle.
- Lower the heat and add turmeric powder. Stir briefly.
- Add shredded cabbage and diced potato. Mix well.
- Cover the pan and cook on low heat.
- When the vegetables are half-cooked, add coriander powder, chilli powder, amchoor, and salt. Mix well.
- Cover again and continue cooking on low heat until the potatoes are tender and the cabbage is soft.
- Sprinkle garam masala and increase the heat. Sauté on high heat for a couple of minutes, stirring occasionally.
